Red Velvet Sandwich Cookie Recipe
The Perfect Valentine's Day Treat

One great way to personalize your Valentine’s Day gift is to make it. What better way to show your love than with a homemade sweet treat?

This Red Velvet Sandwich Cookie by Paula Dean, that sassy Southern lass from the Food Network, is easy to bake but your honey will think you spent hours slaving away in the kitchen.

 

 

 

 

 

Cookie Ingredients

1/3 cups flour

2 tablespoons cocoa powder

1 teaspoon baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

1/4 cup butter, room temperature

1 cup sugar

2 eggs

2 tablespoons buttermilk

2 teaspoons apple cider vinegar

1 teaspoon vanilla extract

1 tablespoon red food coloring

 

Cream Cheese Frosting Ingredients

1 pound of cream cheese, softened

2 sticks of butter, softened

1 teaspoon vanilla extract

4 cups powdered sugar

3/4 cups chopped pecans

 

Directions

Cookies:

Preheat oven to 375.

Combine all dry ingredients in a bowl, then set to the side.  Next, cream the butter and sugar until light and fluffy. Add the eggs one at a time until fully blended. Then, beat in the buttermilk, apple cider vinegar, vanilla and food coloring. Once combined, add in the dry ingredients. Mix thoroughly until blended.

Line a sheet tray with parchment paper. Using an ice-cream scoop, drop 2-inch round dollops onto the tray. Bake for 10 minutes, until cooked through. The texture should be cake-like and light. Allow the cookies to cool on the sheet for a few minutes and then place them on a wire rack to cool completely. Note: the cookies must be fully cooled in order for the texture of the filling to hold up.

Frosting:

In a large bowl, beat the cream cheese, butter and vanilla until smooth.  On a low speed, slowly add the powdered sugar until full incorporated.Then, increase the speed and whip until light and fluffy.

Construction:

Generously spread the flat side of one cookie with frosting. Sandwich another cookie on the other side.  Roll the edges in finely chopped pecans for added crunch.

This recipe yields 12-15 sizeable and utterly indulgent Valentine's Day cookies.You can taste the love in each and every bite.
