Beecher’s Fuses Vodka and Sandwiches into one Tasty Beverage

Remember when you were a little kid, coming home from school in the rain, dodging bullies, soggy and tired, and your mom would set you up with a steaming bowl of tomato soup and a...grilled cheese martini? No? Bet it would’ve made those hours of studying fly by.

Your savory sandwich wishes and vermouth dreams can be fulfilled at Beecher’s Handmade Cheese, now open in the Flatiron. The Seattle-based cheese making store and restaurant, which opened its first Manhattan location in June, is a “living museum where visitors witness the 5,000 year-old art of making cheese.” And eating cheese. Lots and lots of cheese.

The upstairs store and cafe features both cheeses that have been made in-house as well as ones that are locally sourced. The products change seasonally so the shop is worth regular visits to see what’s in stock.

Downstairs in the Cellar, the dark space is dairy-lover’s paradise. One part cheese-heavy menu, one part sultry bar and lounge, the restaurant welcomes diners to take a seat on the cow hide-covered banquettes and relax into indulgence. The menu, which features Mac and Cheese that was named one of Oprah’s favorite things in 2010, includes “savory meats and veggies, or a custom cheese plate featuring the best in the country.”

Oh, and that Grilled Cheese Martini we mentioned? It’s made by soaking a grilled cheese sandwich in vodka for 24 hours, pressing it through a chinoise and a (insert joke here) cheesecloth, and then straining it into a prosciutto-rimmed martini glass and topping it off with a tomato juice ice cube. The beverage was the brainchild of Beecher’s bartenders and isn’t listed on the menu...so make sure to ask for it.

And while you’re at it, why not order some food with that drink? We hear they serve cheese.
