Bleu Cheese Stuffed Celery Is More Like It

So I know that finger foods are your best bet for your New Year's Eve party because it's not easy to double fist your drinks when you have to hold onto what you're eating. A quick pop-it-in-the-mouth treat is what you need and it's what I got for you right here.

I'm a big fan of bleu cheese, it's my favorie salad dressing and I can't get enough of it. This dish right here is a tricky way to say you're eating healthy since it involves celery, or water, whatever you want to look at it as. Either way, it's scrumptious and an easy treat to pass around to your guests. So munch on...

Bleu Cheese Stuffed Celery (compliments of Good Housekeeping)

4 oz. bleu cheese

2 oz. reduced-fat cream cheese, softened

2 tbsp. whole milk

pepper

9 stalks celery hearts, cut into about 3 inch pieces

1/2 cup dried Calimyrna figs, chopped

1 tbsp. pure honey

snipped chives for garnish

Okay chef's, grab yourself a medium bowl and beat the bleu cheese and cream cheese on high with a mixer until smooth. Then add the milk and 1/4 tsp of freshly ground black pepper. Beat with a spatula until mix is mixed! Cover and refrigerate the mix for about 30 minutes or up to 2 hours.

Now when you're ready to serve your bite-sized treats grab a quart-sized resealable plastic bag and fill it with the mixture. Cut a hole in the corner (not too big!) and pipe the cheese mixture in the center of the celery (the little pocket that is perfect for piping). Top with the figs and chives, drizzle with honey and you're ready to send these delights to your guests!
