Simple. Delicious. And totally worth a shot.
That's all I have to say about that.
2 tbsp peanut butter
1 garlic clove
Juice of 1 lemon
3 tbsp EVOO
3 tbsp water
Salt and Pepper
red pepper flakes
Okay, so to start puree the peanut butter, garlic clove, some oregano (to taste) and the juice of 1 lemon. Afterwards, blend in the water, EVOO and S&P.
On the other hand, thinly slice the eggplants, brush each side with EVOO, season with S&P and lightly grill each side. It takes about 3 minutes per side since eggplants are so tender already.
Top your side dish with the peanut dressing, some red pepper flakes and more oregano if you like.
Now how simple was that?
