Watermelon has always been associated with the summer but Food Network Magazine has changed that forever. It is not just for summer anymore, add it to your New Year's Eve menu as a light and interesting first course dish.
All you need is:
4 cups diced watermelon
1/2 red onion, thinly sliced and soaked in cold water
1 cucumber, seeded and sliced
While you prepare the rest of the salad, soak the red onions in water. Dice the cucumber and add it to the watermelon. Make a handful of thinly sliced mint leaves and toss it in the with watermelon and cucumber. Drain the onion and add it to the salad (with some cashews if you like) and then add 1/4 cup Olive Oil and juice from 1/2 a lemon.
Season to taste with Salt and toss with tongs or hands. Crumble the goat cheese on top (be as generous as your like) and serve. It is best to make this the day of your event, it won't hold well in the fridge.
